This dish is one of the best and most popular dishes in Spain. Usually, the main ingredient of the Spanish stuffed peppers with cod, the “pimientos de piquillo”, can be found in the north of Spain. These peppers can be stuffed with rice, vegetables, crab, salmon, etc. However, the “piquillo peppers” are usually filled up with hake or cod.
Place the cod into the pan with some water, heat it up for 2 minutes. Stop the heating and crumb the cod into tiny pieces. Reserve the liquid for later.
After that, cut the onion, the green peppers, and the garlic into small pieces. Fry them in a pan with olive oil. Once they are cooked, you can add the cod and cook it as well. Keep cooking until the color of the cod changes. Finally, place the cooked mixture into a plate. Reserve the liquid in the pan, you will use it for the sauce later on.
Fill up the “piquillo” peppers with the cooked mixture. Then, place them into a baking tray. Grease their surface with olive oil and baked them at 180°C for 20 minutes.
“Spanish secret: Do not cook too much the cod at the beginning. Instead, cook it later, when fryinig the onion and the green peppers. This will help you to have a juicy cod inside the Spanish stuffed peppers”

Make the sauce!
Place the liquid you previously reserved into a pan. Heat it up and reduce the liquid. Add the cream and 1 or 2 peppers cut into pieces while cooking. Add salt as you wish.
Present the Spanish food in the best way!
Add the sauce in the plate, place the peppers, and finally grease them with a little bit of olive oil.
