INGREDIENTS (For 1 Spanish omelette):
- 3 eggs
- 4 potatoes (medium size)
- 1/2 onion (optional)
- 1 garlic clove (optional)
- Olive oil and salt
Firstly, chop in very very little pieces half of the onion and the garlic. a garlic chopper can help you in doing that, as we already mentioned in our previous post “The top 5 Spanish cooking secrets”. Thereafter, cut the potatoes into small pieces (pieces with 2 cm diameter).
Secondly, poach the potatoes, garlic and onions in a pan with abundant oil. Add the salt as you wish and fry the potatoes until they are soft. Cook it for 20 minutes or so!
Stir 4 eggs in a bowl and add more salt if you wish.
Once the potatoes, garlic, and onion are well done and soften. You have to drain and quit as much as oil as you can. Pour the mixture into the strainer to drain the oil. Once you do it, you will have to add the mixture into the bowl with the eggs. Mix well.

Add a little bit of oil into a pan, just to grease the pan. Once the pan is hot, add the whole mixture into the pan.
The important one! Right after adding the mixture to the hot pan, mix and shake it in the pan quickly. After that let it be cooked. After 2 minutes or so, flip the omelet. A plate covering the pan and then flipping it around could help. Don’t try to flip it around in the air unless you are a master in cooking Spanish omelets.
Other versions of Spanish omelets:
You can substitute the onion with spring onions, or you can add other veggies such as green peppers, cucumber or eggplant. Besides, other possibilities are adding tuna or meat. Indeed, some chefs add pieces of chorizo to the final mixture, just right before placing it on the hot pan.
As a curiosity, some Spanish master chefs add a little bit of milk, or even baking soda to the mixture of the fried potatoes and the eggs. This will give the tortilla a special flavor. Besides, some restaurants also add chips to the tortilla de patata.
