Beans with Cauliflower Recipe

This recipe is perfect for pescetarians, vegeterians, and vegans. Dishes with beans are very famous in Spain, specially in the north of Spain. The “Fabada”, a type of beans from Asturias, constitute the basics of our mediterranean diet.

This recipe can be made by pescetarian and vegetarian people. The main ingredients are beans and cauliflower. Spanish people add extra ingredients such as chorizo and morcilla. But here we will show you how to do your own Spanish beans.
You will need a pressure cooker to cook this dish. It will assure you to prevent the excessive pressure build-up. More vitamins and minerals will be preserved while cooking and it also reduces cooking times by up 70 %.



Step 1.
The first thing you should do is to keep the beans under water overnight. This will make them soft and easy to cook the next day.
Step 2.
The next morning you have to fry the onion in a pressure cooker.
*Optional for the meat lovers:
You can fry “chorizo”, “morcilla”, pieces of pork such as bacon, or “panceta”…
Step 3.
After that, you have to put the paprika and the fried tomato into the pressure cooker. Thereafter, you have to fry and mix the mixture.
Step 4.
Finally, place the beans in the pressure cooker, then salt as you wish. And finally, add water to fill up half of the pressure cooker.






Step 5.
Additionally, you should also cut the potato into pieces and add it into the pressure cooker. Add also the 2 cloves of garlic.
Step 6. Very important!
Give it the Spanish flavor!
This step is the one that will give you the typical Spanish flavor, especially from the north of Spain. Take the pepper and quit the head of the pepper. Clean it with tap water and add it into the pressure cooker.
Step 7.
Close the cooker and cook it. Leave it for about 35 minutes. Be careful and control the heat the pressure cooker.
Step 8.
Take the pepper and peel it. Remove the meat of the pepper from the skin. Put the meat of the pepper into the pressure cooker. Then, cook it more and it will be ready!


“Additionally, you can add cauliflower to the dish. Place the cauliflower in the pressure cooker and cook it for about 10 minutes“

Step 9.
